Assuming momentum was conserved, Jimmy and Kevin and their roller coaster car do not appear to slow down at all. How is it that the momentum was conserved when the bug collided with Jimmy, but there was no apparent change in speed?

Owing to the fact that the speed of the cars  did not change, the momentum of the objects will not change.
