In Chapter 3, Pip reveals to the man that there is another convict on the loose.
Joe gives Pip more gravy to console him after he complains that grown folks are making fun of his gender and expresses his appreciation for his sister raising him. Because Joe recently allowed a criminal to steal a file and a lot of food from him, we can infer that he is nice and considerate.
He locates the original convict and provides him with food and a file. The man hurriedly consumes the food because he is starving. The prisoner becomes irritated and starts to try to file his iron off until Pip advises he spare some for the other man.
